Secret Marshmallow Message

Why do the parts of the marshmallow painted with baking soda toast faster than the rest of the marshmallow?

Baking soda is a base (as opposed to an acid). Bases speed up a process called the Maillard reaction.

The Maillard reaction is actually a series of chemical reactions between sugars and proteins that occur when food is heated.

          Well we do have some slightly larger than mini but yours looked huge. Perhaps it was zoomed in.
